Natural yeast fermentation. 100% whole bunch. 25 days on skins. No additives except for 15 mg/L sulphites before bottling.

Maturation

22 months in old French oak barrels. No new oak

Bottling

13 March 2023 without fining or filtration. 590 bottles produced
