Natural yeast fermentation. All destemmed. 19 - 26 days on skins. No additives except for 15 mg/L sulphites before bottling.

Maturation

20 months in old French oak barrels. 14% new oak

Bottling

26 January 2023 without fining or filtration. 4568 bottles produced
